Yogurt with Apple and Almonds

This is a recipe from the December 2007 issue of Everyday Food Magazine which I instantly loved. It's great for breakfast or dessert, takes 5 minutes to make, is delicious and healthy.

For 2 portions:

1 Granny Smith apple, coarsely grated
*any other apple works well too. Leave the skin on if you want*


1 1/2 cups plain low-fat yogurt
*Dannon plain yogurt being my favorite here, no gelatin or modified starch in there*

1/4 cup raisins

*best with GOLDEN raisins which have been washed in hot water to plump them up a bit*


2 tablespoons honey


1/4 cup sliced almonds (toasted, if desired)

*slivered almonds work well, too.
ALDI has those for a decent price, and golden raisins as well. Just toast them quickly in a pan or toaster oven, they're MUCH better that way*


In a small mixing bowl, combine apple, yogurt, raisins, and honey; divide between two serving bowls. Sprinkle with almonds, and serve immediately.
